Paloma Springs Cocktail

 

This spicy, smoky take on a Paloma is our go to poolside drink.  As we sip the Paloma Springs, we imagine ourselves under a palm tree, adjacent to a flat roofed, mid-century modern home.  It feels like that with this cocktail in hand, but maybe it looks a bit more like dipping our feet in a kiddie pool on the roof as the city screeches by below.

Mix this transportive cocktail up, and get ready to relax. 

NB: Because it is beach season, we confess that sometimes we like to make ours with diet Squirt—it's nice, after all, to have a flavorful sugar-free option every now and then. And Mexican squirt makes for a perfect cane-sugar-not-corn-syrup option. 

Paloma Springs
Makes 1 drink

+ 2 ounces Mezcal
+ 4 to 5 ounces Squirt
+ Juice of 1/2 lime
+ Serrano or jalapeño pepper
+ Salt

In a tall glass or tumbler, muddle 2-3 slices of the pepper and lime juice. Add ice, mezcal, squirt, and stir to combine. Finish with a sprinkle of salt across the top.
