El Gran Legado de Vida Blanco Tequila
Made at the Tequila Cascahuin Distillery, perhaps best known and beloved for their house brand of the same name, El Gran Legado is an elegant sipping blanco that benefits from many of the same traditional methods employed by the distillery. Cooked for 3 days in a large stone oven, or "horno", it is then allowed to cool for an additional day before being crushed. A roller mill is used to separate the juice from the pulp, and then the juice is fermented over a four day period in stainless steel tanks. It is double distilled, first in a steel alembic pot still, then in a copper alembic pot still. Coming off the still at about 55% abv, it is then reduced to 40% bottling proof and allowed to mellow for 15-30 days before bottling.
The result is a nose full of sweet floral aromas, bright lemon peel, minerality, and mint. On the palate there is sweet agave, black pepper, wet stone, and more citrus. Fantastic body and medium-long finish.
