Chenin Blanc is fortified with spirit, gently sweetened by the sugar of the grapes, bittered by cinchona bark and flavored with 35 ingredients from the Cape, such as fynbos, kalmoes and naartjies. The rich floral variety of the Cape coast, including many plants that don’t occur anywhere else in the world lend their unique flavors and intriguing aromas. It drinks like a more bitter, drier and more aromatic Lillet Blanc. Aroma of quince and fine marmalade, and a complex, mildly bitter taste that teases the tongue as its well-balanced sweetness prolongs the finish. While his family’s sloe gin recipe was one of their original products and inspirations, Ashby’s passion for whiskey and spirits production led her to don the Master Distiller cap (and their distilling team remains one of the only entirely female ones in the US to this day.) They prioritize the use of local and organic ingredients, and make everything in-house from milling, mashing, fermenting, and distilling, all the way through to bottling. While many still know them for their vodka and gin line of products, their more recently released straight whiskey is aged at least four years in 53-gallon new American oak barrels, and bottled non-chill filtered to preserve the spirits full complexity. In 2020 they were even recognized by the American Distilling Institute as “Distillery of the Year”, a designation given in honor of the artistry and quality of the spirits being made, and for their leadership within the craft spirits community.\u003cbr data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003eADI recognizing distilleries for their artistry might sound a bit lofty, but Spirit Works whiskey exemplifies the ideal. They are continuously experimenting with their grains and mash bills, creating singular barrels of whiskey that will never be duplicated. Access to these gems can be found through their private barrel program, and we’re over the moon for this particular barrel of rye whiskey, distilled from 70% rye and 30% specialty malted barley. While the samples were presented and our selection was done without age statements, at 5 years and 6 months, it’s also pretty exciting to have landed one of the oldest Spirit Works barrels of whiskey to have ever been released. Incredibly lush and supple right out of the barrel, we opted to have it bottled at its cask strength abv of 61.6%.\u003cbr data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003eOn the nose warm honeycomb, golden raisins, and a touch of oak give way to dark chocolate, cacao nibs, and a yeasty bread note that conjures fresh chocolate babka. The palate is rich and remarkably easy sipping, a touch of vanilla, apricots, toasted coconut, and honeysuckle give way to dried fruits, prunes and musky berries, and a deeply enduring cocoa reminiscent of a port-finished whiskey, though almost certainly owing to the specialty malt chosen for this particular mash. Initially sweet with a lovely depth of mid-palate richness, the whiskey dries out on the finish with a lingering and elegant aromatic quality as the majority grain asserts itself with flavors of dark rye bread spices and Turkish espresso. Immensely enjoyable at 123.2 proof, with the approachability of a bourbon and the complexity of rye whiskey, aerating the glass intensifies the dark chocolate elements, and the spice is pleasingly rounded and never sharp. Various Navy Style blends had become ubiquitous in tiki drinks, on British grocery store shelves, and in the popular imagination at large. This blend of rum produced on various stills, each one at one time from a unique distillery, is how most people know Demerara rum. When Demerara Distillers Limited (DDL) consolidated the rum production of Guyana, they got all the significant surviving stills under one roof. This wasn't out of a sense of duty to history, or to make a museum of rum production, but because they were essential for blending purposes to make this kind of rum, which they then began to sell under their El Dorado label. \u003c\/p\u003e\n\u003cp\u003eBecause of this, the more regular model of one kind of still or maybe two (particularly in the case of rum) being all a distillery needs could never really work for DDL. But of course this also means they have under their auspices many very unique stills that produce very unique rum. And now that there is a significant rum drinking consumer base out there, there is a thirst to get to know the character of each of these stills on their own, rather than simply as a component of a Navy blend. Generally the only way to go about this is through independent bottlers - small companies that buy casks either directly from the distilleries or on the European bulk rum market. We have featured Demerara rum from independent bottler Holmes Cay before, and we were absolutely thrilled to be able to do it this time with one of our longtime favorite independent bottlers, the minister of rum himself, Mr. Ed Hamilton. \u003c\/p\u003e\n\u003cp\u003eEd is well known in the growing but ever small seeming rum community for his Ministry of Rum line of essential rum bottles, his charmingly old-school website of the same name where rummys have long sought information about rum production and well mannered arguments in the forums, and his strong and well argued opinions about the Rum industry and culture. Before he was the Minister, he built sailboats in Taiwan, vagabonded around southeast Asia, and then sailed around the Caribbean, where he stumbled into what seems to be his ultimate calling. His personality is as big as his bushy white moustache, his influence as wide as the brim of his signature Panama hat. We love any opportunity to do business with him, or just shoot the shit. \u003c\/p\u003e\n\u003cp\u003eNot only was it great to work with Ed sourcing this pick for our club, but he was able to supply us with one of the often harder to come by distillates from DDL. The wooden stills of Guyana are perhaps the most famous in the brand's impressive and historic collection, but most of what we see come our way in single still expressions are from the Port Mourant Double Wooden Pot Still. Now, we aren't complaining, as that still makes some of the most characterful rum we've ever tried, and we never tire of its rich and wild character. But it is familiar. We see a decent amount of it. Much less common to see in the wild are bottlings of what is probably the second most famous still - the twin wooden coffey still, formerly of the \"Enmore\" sugar estate.\u003c\/p\u003e\n\u003cp\u003eThis fantastic example of Enmore rum was distilled in 2012 and put down to age in ex-bourbon barrels. It was then bought and transferred to the U.K., where it aged for eight years before being bottled at a hefty cask strength of 67.1% abv. This is some really big rum, and though most of us at B\u0026amp;B tend to drink our cask strength spirits without water more often than with, this one is well served by a few good drops of it. The nose is woodsy from the get go. Cedar, pine, forest floor, herbs, and an almost agave-like sweet earthiness. After sitting for a while with some water, a burnt caramel and roasted pineapple duet emerge alongside the woodsiness. The palate follows with that pineapple, along with more agave, licorice, wet stone, dried apricot, and hints of shishito pepper. The finish sits on the burnt caramel and earthiness, balancing sweet and bitter elegantly. So we counted ourselves as lucky indeed when we were able to bring in a single barrel of it just for our store. This feels like a long term relationship for us now, and our love is only deepening. Just when we think we are well familiar with all of the Chairman's secrets, we try the next year's bevy of single barrel offerings and new things take us by surprise. With two distinct pot stills and various column stills at their disposal, along with varying kinds of distillates from heavy to light and even sugarcane juice rums, there can be a lot of variation. Those 3 years have truly left their mark too, a lifetime of finishing for a spirit, usually measured in months. The first sign of this influence is apparent just looking at the bottle, which is as dark and lusciously ruby tinted as any natural spirit that's ever come through our store has ever been. It's honestly enchanting to just hold up to the light and gaze upon. But they also make two other, lesser known Rye mashbills that have always piqued our interest: A more \"Kentucky Style\" high corn recipe (51% rye, 45% corn, 4% barley), and especially the oddball barley heavy mashbill (51% rye, 49% barley). When we were approached about snapping up a single barrel pick of Rossville, we were tickled that the tasting was mashbill-blind. All we knew going in were the different barrel numbers. Lush, full of caramel and vanilla, with accents of baking spice and oak. The kind of whiskey that set off bourbon fever for so many, and a welcome palate cleanser amongst all the innovation.\u003c\/div\u003e\n\u003cdiv\u003e \u003c\/div\u003e\n\u003cdiv\u003eThis single barrel edition from them is unique in that the very moniker of \"single barrel\" means something different here. For most distilleries, a single barrel is just that, an unblended cask, that was filled with unaged distillate and then allowed to age over a period of years before being bottled in it's untouched (or perhaps proofed down) character, unblended. But being a brand whose whole Raison D'Etre is blending, Jefferson's does it slightly differently. Their proprietary blend of whiskies are aged in barrels after blending, where they are either further batched, or now, occasionally bottled as \"single barrels\" at an elevated 50% abv, as is the case here.\u003c\/div\u003e\n\u003cdiv\u003e \u003c\/div\u003e\n\u003cdiv\u003eThe profile of this barrel, no. 411, is classic sweet, rich, desserty Jefferson's. Aged for their typical 8 years, it opens with a nose of peaches, vanilla, pecan, stewed plums, and caramel. The palate is just as rich as you'd expect, with buttercream, caramel, yellow cake, and a touch of cinnamon and clove. We generally pick out a barrel each of Knob Creek bourbon and rye together each year at the same time, and though the bourbon is always top tier stuff, the Rye really gets us giddy. Many of you seem to agree with us too - our last barrel of Knob Creek rye is one of our most asked about barrel selections, generally with the eager question of \"When are you getting another?\"\u003c\/span\u003e\u003c\/div\u003e\n\u003cdiv\u003e \u003c\/div\u003e\n\u003cdiv\u003eThe time has come, and once again it's big, rich, spicy, and complex, begging to be sipped, savored, and treasured. (Though we'd be lying if we said we weren't gonna make a few high proof, top shelf Manhattans with it.) The barrel comes from warehouse 1, floor 4, and rick 49. It was barreled in December 2016, and we selected it in August of 2022, being bottled just around it's 6th birthday. The nose is big but welcoming, with classic rye notes of mint, peppercorn, citrus peel, especially lemon, making way for rich toffee and maple notes. The palate is a holy rye trinity of spicy, fruity, and rich, with musty oak, red apple skin, clove, allspice, black pepper, lychee, and caramel apple. In recent years it has largely flown under the radar, and was primarily used as a key ingredient in The Famous Grouse Blended Scotch. Given the barrels at the brand's disposal as owners of the Buffalo Trace distillery, it wasn't surprising that it should involve some barrel finishing, as hot a trend as that is in our current drinking climate. What we weren't expecting was a single barrel program, giving us the opportunity to select a store pick for our devoted Rummy customers. And what a surprising and delightful barrel it is! Finished in Sazerac Rye barrels, it is also bottled at a slightly higher 43% abv for a fuller texture and flavor.\u003c\/p\u003e\n\u003cp\u003eThe nose gives a good dose of that molasses-fruit funk that gives away the pot still component, and a solid peppery spice announces the cask finish. Alongside this is a raisinet note that almost hints at sherry like character, a welcome complexity. The palate is gentle and though higher proof, decidedly more easygoing than the standard Myers's bottling, with a deeper richness throughout the sip. Dark chocolate, vanilla cake, dates, and a slight amaro-like finish makes it an ideal candidate not just for tiki punches and Hurricanes, but more spirit forward drinks, playing with rich liqueurs and vermouths easily. \u003c\/p\u003e","brand":"Fred L.
