Montelobos Joven Ensamble Mezcal
Made from a blend of Espadin, Tobala, and Papalote agaves, this Ensamble hails from Palenque del Tentzo in San Nicolas Huajuapan, Puebla. The Maestro Mezcalero was Aaron Alva, under the Ivan Saldana. The agaves were cooked in their conical underground brick pit oven, which is fueled by encino and tepeguaje wood, before being mechanically shredded and then wild fermented in open pine wood vats. It was then distilled on a direct fire copper still and bottled at 45.3% abv.
On the nose you'll find cooked agave, smoke, and citrus oils. The palate follows with capers, nutmeg, and pink peppercorn.
Montelobos Mezcal was created by agave specialist Ivan Saldaña, PhD in Botany, and agave specialist Don Abel López Mateos, a fifth generation mezcalero. Saldaña’s vision was to create a mezcal with a mosaic of balance and complexity that celebrates the characteristics of the agave plant. His ambition was that anyone tasting it could discover something new every time in the distinctive and layered spirit.
