Something so strikingly delicious and unique shows up that you throw your head back a bit, your eyes sort of pop open with glee, and maybe you even let out a little purr. It’s always an exciting experience, and when it comes from a distillery in our backyard who we have such deep admiration for – that delight is compounded even more.\u003cbr data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003eSpirit Works has been distilling in Sebastopol since 2012, founded by husband and wife team Timo and Ashby Marshall. While his family’s sloe gin recipe was one of their original products and inspirations, Ashby’s passion for whiskey and spirits production led her to don the Master Distiller cap (and their distilling team remains one of the only entirely female ones in the US to this day.) They prioritize the use of local and organic ingredients, and make everything in-house from milling, mashing, fermenting, and distilling, all the way through to bottling. While many still know them for their vodka and gin line of products, their more recently released straight whiskey is aged at least four years in 53-gallon new American oak barrels, and bottled non-chill filtered to preserve the spirits full complexity. In 2020 they were even recognized by the American Distilling Institute as “Distillery of the Year”, a designation given in honor of the artistry and quality of the spirits being made, and for their leadership within the craft spirits community.\u003cbr data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003eADI recognizing distilleries for their artistry might sound a bit lofty, but Spirit Works whiskey exemplifies the ideal. They are continuously experimenting with their grains and mash bills, creating singular barrels of whiskey that will never be duplicated. Access to these gems can be found through their private barrel program, and we’re over the moon for this particular barrel of rye whiskey, distilled from 70% rye and 30% specialty malted barley. While the samples were presented and our selection was done without age statements, at 5 years and 6 months, it’s also pretty exciting to have landed one of the oldest Spirit Works barrels of whiskey to have ever been released. Incredibly lush and supple right out of the barrel, we opted to have it bottled at its cask strength abv of 61.6%.\u003cbr data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003eOn the nose warm honeycomb, golden raisins, and a touch of oak give way to dark chocolate, cacao nibs, and a yeasty bread note that conjures fresh chocolate babka. The palate is rich and remarkably easy sipping, a touch of vanilla, apricots, toasted coconut, and honeysuckle give way to dried fruits, prunes and musky berries, and a deeply enduring cocoa reminiscent of a port-finished whiskey, though almost certainly owing to the specialty malt chosen for this particular mash. Initially sweet with a lovely depth of mid-palate richness, the whiskey dries out on the finish with a lingering and elegant aromatic quality as the majority grain asserts itself with flavors of dark rye bread spices and Turkish espresso. Immensely enjoyable at 123.2 proof, with the approachability of a bourbon and the complexity of rye whiskey, aerating the glass intensifies the dark chocolate elements, and the spice is pleasingly rounded and never sharp. While Pinhook will batch a general release each year, we will be receiving Northern California's only single barrel from the series, starting with this 6 year bottling, and ending with a 12 year single barrel. Once home to hundreds of sugar producers and distilleries, almost all along the Demerara river, production of rum was slowly consolidated once the sugar industry had done the same. Nowadays all of the surviving stills from various estates are housed together under the auspices of Demerara Distillers Limited, or DDL. And that is truly what makes Demerara rum so special - the stills. \u003c\/p\u003e\n\u003cp\u003eThrough the consistent business of the British Navy, which supplied their sailors with daily rations of blended Demerara rum, Navy Style rum became synonymous with Guyana, even after the daily rum ration ceased in the 1970's. Various Navy Style blends had become ubiquitous in tiki drinks, on British grocery store shelves, and in the popular imagination at large. This blend of rum produced on various stills, each one at one time from a unique distillery, is how most people know Demerara rum. When Demerara Distillers Limited (DDL) consolidated the rum production of Guyana, they got all the significant surviving stills under one roof. This wasn't out of a sense of duty to history, or to make a museum of rum production, but because they were essential for blending purposes to make this kind of rum, which they then began to sell under their El Dorado label. \u003c\/p\u003e\n\u003cp\u003eBecause of this, the more regular model of one kind of still or maybe two (particularly in the case of rum) being all a distillery needs could never really work for DDL. But of course this also means they have under their auspices many very unique stills that produce very unique rum. And now that there is a significant rum drinking consumer base out there, there is a thirst to get to know the character of each of these stills on their own, rather than simply as a component of a Navy blend. Generally the only way to go about this is through independent bottlers - small companies that buy casks either directly from the distilleries or on the European bulk rum market. We have featured Demerara rum from independent bottler Holmes Cay before, and we were absolutely thrilled to be able to do it this time with one of our longtime favorite independent bottlers, the minister of rum himself, Mr. Ed Hamilton. \u003c\/p\u003e\n\u003cp\u003eEd is well known in the growing but ever small seeming rum community for his Ministry of Rum line of essential rum bottles, his charmingly old-school website of the same name where rummys have long sought information about rum production and well mannered arguments in the forums, and his strong and well argued opinions about the Rum industry and culture. Before he was the Minister, he built sailboats in Taiwan, vagabonded around southeast Asia, and then sailed around the Caribbean, where he stumbled into what seems to be his ultimate calling. His personality is as big as his bushy white moustache, his influence as wide as the brim of his signature Panama hat. We love any opportunity to do business with him, or just shoot the shit. \u003c\/p\u003e\n\u003cp\u003eNot only was it great to work with Ed sourcing this pick for our club, but he was able to supply us with one of the often harder to come by distillates from DDL. The wooden stills of Guyana are perhaps the most famous in the brand's impressive and historic collection, but most of what we see come our way in single still expressions are from the Port Mourant Double Wooden Pot Still. Now, we aren't complaining, as that still makes some of the most characterful rum we've ever tried, and we never tire of its rich and wild character. But it is familiar. We see a decent amount of it. Much less common to see in the wild are bottlings of what is probably the second most famous still - the twin wooden coffey still, formerly of the \"Enmore\" sugar estate.\u003c\/p\u003e\n\u003cp\u003eThis fantastic example of Enmore rum was distilled in 2012 and put down to age in ex-bourbon barrels. It was then bought and transferred to the U.K., where it aged for eight years before being bottled at a hefty cask strength of 67.1% abv. This is some really big rum, and though most of us at B\u0026amp;B tend to drink our cask strength spirits without water more often than with, this one is well served by a few good drops of it. The nose is woodsy from the get go. Cedar, pine, forest floor, herbs, and an almost agave-like sweet earthiness. After sitting for a while with some water, a burnt caramel and roasted pineapple duet emerge alongside the woodsiness. The palate follows with that pineapple, along with more agave, licorice, wet stone, dried apricot, and hints of shishito pepper. The finish sits on the burnt caramel and earthiness, balancing sweet and bitter elegantly. The old days of praising a whiskey for it's \"smoothness\" or general affability are long gone. Now are the days of big character, robust flavor bombs, and sky high proofs. Barton 1792 distillery has long been praised for its good value bourbons with rich, high rye character, and in 2016 they finally released the 1792 Full Proof, giving fans a chance to try their bourbon in its fullest form. It had all of the sweet and spicy character fans had grown to love, but non-chill filtered and bottled at the barrel entry proof of 62.5% abv. A few years later, whiskey guru Jim Murray named it his \"World Whiskey of the Year\", igniting a firestorm of demand for it. While that has somewhat died down, it is still a cult favorite high proof bourbon, and sold out far more often than not. So we counted ourselves as lucky indeed when we were able to bring in a single barrel of it just for our store. Honey sweet at first, it evolves with a long rye spice tingle on the tongue after a few seconds, some sage and lavender, then more of that toasty grain, even hinting at a dry vegetal grassiness that slowly comes forward as it keeps developing over a period of a couple minutes. It's a hot topic in the rum world, perhaps even a kind of signifier of being in whatever ignominious club us scallywags are admittedly a part of. This style of rum, the kind of ancestral rum of Jamaica that in recent years has become beloved again for its robust intensity of flavor, is synonymous for many with the term \"funky\" - a term thrown around as a shorthand for intensely fruity, pungent, earthy, nutty flavors. The thing is though - not all Jamaican pot still rum is really all that funky, and in fact some of the best examples of the style don't really exemplify any of the main hallmarks of funk. Enter Worthy Park, which often gets overshadowed by other, funkier producers like Hampden Estate or Long Pond because of the more subtle approach to pot still rum they take. The profile is always decidedly Jamaican, but you may not immediately smell it from across a room upon popping the cork. To make an imperfect analogy to Scotch, if Hampden Estate is a big Islay peat monster like Laphroaig, Ardbeg, or Lagavulin, Worthy Park is Springbank or Highland Park - still a spirit with plenty of character, but with all of the elements in a more subtle and harmonious balance. \u003c\/span\u003e\u003c\/p\u003e\n\u003cdiv data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003c\/div\u003e\n\u003cdiv data-mce-fragment=\"1\"\u003eThis elegant, subtle approach to the style is especially apparent in our most recent single barrel pick, one we have been particularly excited about since we first selected it. This very special barrel, 100% first fill ex-bourbon, sat in the hot and humid Jamaican climate for a whopping 16 years, a lifetime and a half for tropical aging. In that time, the beautiful character of the WPL marque (Worthy Park Light - defined as being an ester level of 60-119 \u003cspan data-mce-fragment=\"1\"\u003e\u003cspan color=\"#000000\" style=\"color: #000000;\" data-mce-fragment=\"1\"\u003egr\/hL AA) has\u003c\/span\u003e\u003c\/span\u003e become spectacularly concentrated and rich, with the alcohol level naturally reduced to 53% abv. We get a barrel from them each year, and though that may mean the novelty of the process is fading, the value and quality of what is in those barrels has remained stunning to us. This feels like a long term relationship for us now, and our love is only deepening. Just when we think we are well familiar with all of the Chairman's secrets, we try the next year's bevy of single barrel offerings and new things take us by surprise. With two distinct pot stills and various column stills at their disposal, along with varying kinds of distillates from heavy to light and even sugarcane juice rums, there can be a lot of variation. This year for the first time they had a selection of different cask finishes along with the standard ex-bourbon aged options, widening their color palette even more. \n\u003cdiv data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003c\/div\u003e\n\u003cdiv data-mce-fragment=\"1\"\u003eIt was indeed one of those cask finished barrels that ended up winning our affections this time, a full bodied rum from their Coffey Still, aged first for 13 years in ex-bourbon barrels before finishing for 3 whole additional years in ex-port barrels. Those 3 years have truly left their mark too, a lifetime of finishing for a spirit, usually measured in months. The first sign of this influence is apparent just looking at the bottle, which is as dark and lusciously ruby tinted as any natural spirit that's ever come through our store has ever been. It's honestly enchanting to just hold up to the light and gaze upon. But being a brand whose whole Raison D'Etre is blending, Jefferson's does it slightly differently. This is old, high-proof, high-rye MGP at its finest. The nose features clove, peppercorn, allspice, cardamom, and cinnamon with base notes of rich oak, vanilla, and dark caramel. The palate begins sweet with flavors of dark caramel, toffee, french vanilla, and jammy red fruit before rich oak, leather, peppercorn, and rye spice join on the midpalate. A lengthy finish weaves back and forth between earthy oak \/ tobacco and sweet citrus with a touch of mint. The Pacheco’s sugarcane is grown at an elevation of 4,180 feet above sea level in a tropical, diurnal climate surrounded by fields of mango trees, berry bushes, and over five varieties of bananas, all contributing to the unique terroir imparted during fermentation. The cane juice is open-air fermented in wooden vats for eleven days while the molasses sees a 48-hour closed fermentation. The fermented cane juice is then twice distilled in 1,000-liter, wood-fired copper pot stills, and molasses is distilled in a short, French-style column still. Rather than using fresh cane juice, Piloncillo was used here, a traditional unrefined sugar that is made by simply boiling the fresh pressed cane juice, to the point of browning, then placing into molds where it hardens into a rich, complex sugar that is used across Mexico to sweeten drinks and dishes. The piloncillo distillate, made in their copper pot still, was blended with the molasses rum before aging in barrels that previously held Hungarian Tokaji, a rich and complex dessert wine made from grapes affected by noble rot, giving them immense concentration that makes for excellent sweet wines.\u003c\/span\u003e\n\u003c\/div\u003e\n\u003cdiv style=\"text-align: justify;\"\u003e\n\u003cbr\u003e\u003cspan style=\"color: rgb(0, 0, 0);\"\u003eThey had our attention at Piloncillo, and they had us convinced at Tokaji, but of course we had to try it for ourselves. On the nose, it is like walking into a patisserie, with rich burnt sugar, chocolate sauce, and baking spices like cinnamon and nutmeg riding on the sweet air. There is also the hint of tropical fruits, whether that be from the distillate or the Tokaji - who knows and who cares - there is a touch of kiwi, melon, and orange oil. The palate is where piloncillo rums are especially distinct and lush - whereas fresh cane juice often has a rich sweet nose, the palate shows fruitiness but sometimes dries out compared to the nose - a quality we often enjoy and a signature of Agricole rum. Piloncillo rums seem to carry that richness to the palate with greater vigor, not always what we are looking for, but pretty damn well done when you're looking for an almost bourbon-like sweet palate, done tropical style. Here, there are flavors of butter pastry crust, honey, dried fruits like figs or dates, and a kiss of vanilla and spicy oak. The finish sees the honeyed note ride out on the oak, slowly waving goodbye and\/or beckoning you back again.
