Koval B&B Private Barrel 110 Proof Oat Whiskey
While their approach to distillation is rare and noteworthy, we also love them for their willingness to move beyond the traditional whiskey mash bill. There’s such a wide world of grain out there beyond corn, rye, and barley, as Koval’s Sonat Birnecker Hart says, “An oat whiskey really highlights another side of what whiskey can be, both in flavor and in mouthfeel. It’s not going to be like a rye, and it’s not going to be like a bourbon, and that in itself is exciting and fun!” We can attest, their Oat Whiskey has been the one that we’ve gone back to time and time again. A huge part of it is the texture. At the shop we talk about the sweet stickiness of bourbon being reminiscent of cornbread, and the herbal spice of rye as akin to rye bread; with Koval’s oat whiskey, oatmeal’s sweet, fat, and creamy mouthfeel takes center stage, with perhaps a bit of chewy oatmeal cookie for good measure.
While our barrel showcases the creamy texture we have always enjoyed, at 110 proof (vs their standard 80) it becomes a real thing of beauty. And the flavors are just as gorgeous, the oat is there, along with brown sugar, dried fruits – dates, raisins, and apricots; then milk chocolate and caramel swirl together in sips that manage to be both bright and mellow. The higher proof asserts itself just a touch towards the finish, as a pleasant little kick of heat also gives way to even more unique and exciting flavors – a Mounds bar mélange of graham cracker and shredded coconut, with the chocolate taking on a slightly darker note, and finally the lingering essence of a fresh juicy peach.
