The Trinidad 9 year is distilled by Trinidad Distillers, the makers of Angostura Rum. After aging in bourbon casks in Trinidad for 7 years, it is aged a further year in Pierre Ferrand casks in France before being finished in White Pineau Des Charentes Barrels. Pineau Des Charentes is a blend of fresh grape juice (or lightly fermented grape must) and unaged Cognac eau de vie that is aged together after blending. That finish lends a beautiful kind of stone fruit quality to the rum, playing beautifully with its very Whiskey-friendly notes of butter, almonds, and honey.
