This 2021 release is 100% Palomino from the pagos of Gibalbín and Santa Lucía. The musts are fortified to 15% alc to foster the growth of flor yeast, select barrels from the Solear solera are singled out after around 6 years for further aging, then finally bottled four times a year after an average aging period of around 8. Each "saca" boasts distinct nuances and organoleptic characteristics, therefore offering this wine the perfect amalgamation of rotundity and subtlety.
