5 Sentidos Papalome "La Coleccion Mixteca 2" Agave Spirit
A tropical masterpiece, this post-distillation blend made by husband and wife duo Atelo Ramirez and Laura Arriaga was distilled from wild-harvested agave Papalome (a. Potatorum). In the Spring of 2020, Atelo and his wife Laura made two separate, small batches, by hand-harvesting the agave, roasting it in an underground oven for six days with mesquite and pirúl firewood, hand-mashing the cooked agave and then, fermenting it naturally with spring water for nearly two weeks. Post-fermentation, they double-distilled the mash in their rustic, homemade stills that are crafted from galvanized steel, clay, and copper. They proofed each batch with heads, hearts and tails, and to achieve. their desired profile, they blended a 140-liter batch. distilled in March with a 180-liter batch distilled in April. 320 total liters produced, bottled in June 2021.
“La Colección Mixteca” is a curated selection of small-batch agave spirits crafted in the rustic distilleries of the mountainous Mixteca region of Oaxaca and Puebla. Each bottling explores the maestro mezcalero’s interpretation of subjecting agave endemic to the region to peculiar production methods and styles that have largely fallen out of favor in modern times. A significant portion of sales from the collection will be used for palenque improvement projects.
