5 Sentidos Pichomel y Papalome "La Coleccion Mixteca 2" Agave Spirit
This 210-liter batch was distilled by gregarious maestro mezcalero Atelo Ramirez in his hometown of Los Reyes Metzontis, Puebla. Atelo wild-harvested about 60 Pichomel (a. Marmorata and 46 Papalome (a. Potatorum) agaves, as well as four Espadilla (a. Sp) in San Sebastian Fronteras, Oaxaca an altitude of approximately 5,800 feet above sea level Atelo and his wife Laura roasted the gave in an underground conical oven for nearly a week, covering the agaves with acacia leaves to insulate them. After the roast, Atelo hand-mashed the cooked agave with a wooden mallet, then proceeded to let the crushed agave dry-ferment for six days before adding spring water to his fermenting tanks and allowing them to ferment an additional two weeks. Once fermentation was complete, Atelo distilled the mash in his rustic still made of galvanized steel, clay, and copper. Distilled April 20121, bottled June 2021.
“La Colección Mixteca” is a curated selection of small-batch agave spirits crafted in the rustic distilleries of the mountainous Mixteca region of Oaxaca and Puebla. Each bottling explores the maestro mezcalero’s interpretation of subjecting agave endemic to the region to peculiar production methods and styles that have largely fallen out of favor in modern times. A significant portion of sales from the collection will be used for palenque improvement projects.
