Made with 100% wild agave Cenizo, which takes 12-15 years to mature. This otherwise rare agave grows somewhat abundantly in Durango, where this mezcal is made. Clase Azul follows the same traditional small palenque distillation process as any other artisanal mezcal, but mill the agave by hand, rather than using a donkey and tahona as is traditional. The result is a soft minerality and an elegant touch of smoke that lingers on the finish.
