Coppercraft Straight Bourbon
For this straight bourbon, Holland, Michigan's Coppercraft Distillery sources barrels of 4 year old and 11 year old bourbons from undisclosed distilleries, which are blended to create a rich profile that captures the brightness, fruit, and grain forward qualities of the younger whiskey with the dark, tannic, well oaked qualities of bourbon over a decade old, lending a rich vanilla, tobacco, and spicy fullness to the blend. The whiskies are slowly reduced to proof over a period of several months as the blending is done, a technique borrowed from the old French Cognac houses.
On the nose, there is sweet corn, lemon zest, tart granny smith apples, cinnamon, and light oak. The palate follows with more citrus zest, leaning more orange than lemon, rich vanilla custard, bready rye grain, and a hint of tobacco and burnt brown sugar. The finish brings the rye out, with spearmint, honey nut cheerios, cinnamon, nutmeg, and a dusting of bitter oak. Bottled at 48.5% abv.
