After setting the non-chill filtration standard with Booker’s, Beam has released the limited edition Repeal Batch, taking non-chill filtered bourbon in a lower proof and more affordable direction. Designed to reflect the approximate taste profile that Beam would have been producing in the late 1930s, post repeal, focusing on the texture of the whiskey.
Chill filtration is a process during which the whiskey is cooled to force the formation of solids and ice crystals around things like esters and proteins, this prevents the whiskey from turning cloudy at low temperatures, but also pulls out compounds that add great flavor and texture to the whiskey.
