In what may be a gin world first, KI NO BI Kyoto Dry Gin has been aged in oak barriques sourced from the Champagne region’s Argonne Forest and previously used to mature Henri Giraud’s finest Champagnes. This adds layers of nuance to KI NO BI's profile of juniper, orris root, yuzu, green tea, sansho pepper, ginger, red shiso, and bamboo leaves. The fruit and vanilla from the oak are carefully balanced with the strong botanical profile, so that it comes off as a kind of delicate sheen of influence rather than obvious oak character.
