Mayalen is a 100% handcrafted product which follows organic standards in its production. The location of the distillery is ideal with yearlong access to natural spring water. The wood used for the fermentation barrels is Ayacahuite wood, a Mexican white tree from the mountains of southern Mexico. The two types of wood used to roast the pinas are Huamuchil and Encino Wood, obtained through trees that are already old and dry to ensure forest preservation. Each mezcal is double distilled in a large copper still.
Wild Agave Salmiana (also known as "The Green Giant" or agave Verde), grows in San Luis Potosi and takes 7-25 years to reach maturity. The production process of differs from the common cooking of agaves in an earthen oven because these piñas are cooked through vaporization. The sloped construction of the distillery’s floor ensures consistent production from beginning to end as the liquid from the cooked agaves trickles down by way of gravity.
