Born of the unique culture, climate and abundant resources of the Pacific Northwest, Westward Whiskey has been been a leading voice for American Single Malt for nearly two decades. Their process begins by brewing an artisanal American Ale from scratch, using locally malted barley, ale yeast, and a slow, low-temperature fermentation. They then twice distill in custom low-flux pot stills before maturing their whiskey new, lightly charred American Oak barrels.
The cask strength version is fantastically full bodied, with aromas of toasted almonds, pineapple, apricot, fennel, and barley sugar sweetness. The palate shows stone fruits, orange zest, graham cracker, honey, peach pie, and a punchy spice. The finish is lingering with cigar box, tobacco, and more stone fruit. Bottled at 62.5% abv.
