Brucato Fields Amaro
Brucato Amaro Fields is the fourth amaro released by Brucato Spirits, an homage to California's bountiful Salinas Valley and the agricultural heritage that defines the region. Fields is a vegetable-forward expression that celebrates bitter greens and earthy root ingredients—blending bitter artichoke leaf, red beet, and rhubarb root with aromatic touches of fenugreek seed, dill weed, and coriander. Beginning with California brandy as the base, each botanical is carefully macerated to extract its unique contribution before blending into a unified expression. This is amaro that respects the integrity of California's farm-to-table philosophy while honoring the traditional Italian bitter liqueur aesthetic.
The nose opens with herbaceous, vegetal aromas complemented by subtle spice notes from the fenugreek, dill, and coriander. The palate delivers a distinctly bitter yet balanced character—the earthy sweetness of beet and rhubarb root foundation is underpinned by the herbal intensity of artichoke leaf, while the seed and spice aromatics provide brightness and complexity. This is a more bitter, less sweet expression than many amari, making it ideal for those seeking a genuinely aperitivo-style spirit that stimulates the appetite rather than indulges the palate. The finish is clean, herbal, and lingering.
Perfect served chilled and neat as a contemplative aperitif, on the rocks with a citrus twist, or in craft cocktails where its distinctive vegetable character shines—try it with mezcal and an espresso ice cube for a grounding, complex sipper. Fields also pairs beautifully with rich, savory foods like grilled vegetables, beets, and seasonal preparations that highlight California's agricultural bounty. Brucato Spirits, founded in San Francisco's Mission District by James and Sierra Clark, represents a new generation of American amaro craft—creating bitter liqueurs that celebrate local terroir and ingredient integrity while respecting centuries of Italian tradition.
