The Rocha family has been growing sugar cane and distilling into cachaça since 1902, farming their 1,500 acres of forest, pasture, and sugar cane fields using biodynamic production methods that exclude artificial chemicals from soil and plants. What sets Aguaviva apart is its distinctive grinding system: sugar cane is manually ground using mills constructed in 1871, extracting only the juice without incorporating substances from the bark or bagasse, yielding juice of extreme quality that could even be consumed fresh. Fermentation uses natural yeast extracted from the cane itself, a family secret maintained for four generations, with the process lasting 18 to 30 hours. Bottled at 42% ABV, this is cachaça made the way it was always meant to be—pure, authentic, and uncompromising.
