Ocho Single Estate 2022 La Canada Plata Tequila
One of the few tequilas still made slowly in the old fashioned way, Tequila Ocho is a spirit which showcases that which should be a hallmark to tequila, the agave flavor. Ocho is the first tequila to designate both the year it was produced and the precise field from which the family grown agaves were sourced. Each batch comes from a different field or rancho contributing distinctive characteristics of that place.
In this case, La Cañada (the creek) is just a few miles northeast of Los Alambiques Distillery in a land full of small flat rocks, often used for building fences. Its east border runs alongside a creek (thus the name) which carries water only during the rainy season, with cedar, ash, and oak trees at its sides. The agave reflects the land it's grown in, so the Tequila in turn reflects the agave it was distilled from. Thoroughly rewarding stuff.The agaves used for this release are from Jesus Maria. Six and a half years old and grown at 2,085 meters these were extremely ripe when harvested with sugar levels of 300g/kg or as it says on the label (30% de su peso). This is very fruity with citrus notes and heavy roast agave. It's a fresh and citric Tequila with plenty of minerality. Fresh herbs like rosemary and peppermint join lush strawberries, guavas, and oranges, with cooked agave and pink pepper a constant in the backdrop.
