Babou Cat is a study in quiet confidence—a single cask Trinidadian rum that spent 8 years collecting character across 3 continents. Distilled at Trinidad Distillers Ltd., this rum spent 2 years maturing under the relentless Trinidadian sun followed by 5 years in the UK in an ex-Speyside whisky European oak cask before its final year of aging in the US in a Four Roses barrel that had previously held a 21 year old Trinidad rum (the cult favorite "Jablesse" cask.)
This single barrel captures the depth of Trinidadian rum that we rarely get to experience with official bottlings: bright tropical fruit, polished oak, minerality, and a long, dry finish layered with notes earned only through time and travel.
