Springbank 12 Year, released 1-2 times annually and always bottled at cask strength, is a true modern classic, first released in 2010. Each batch varies not only by proof, but in the cask makeup as well (though it is usually some kind of Bourbon and Sherry blend). This batch, bottled in October of 2020, is the most unique blend of casks yet seen for the 12 year, made of 45% Sherry, 25% Bourbon, 25% Burgundy, and 5% Port.
The result is spectacular: a sweet, deeply fruity, but balanced dram that boasts a smooth buttery body. The peat smoke is immediately present and very welcome with a lovely ashiness. Aromas of bruised apples, mahogany and tobacco leaves alongside a candied sweetness with notes of glazed red cherries, and sugar coated cola cubes. It is rich and sweet to taste with ripe and juicy red fruit flavors. Strawberries and raspberries give way to orange flavored chocolate and gooey toasted marshmallows and bubbling caramelized sugar. On the finish the earthy, dusty notes remain as well as the mouth drying tannins from the burgundy casks. The whisky is deliciously sweet and smoky with the familiar Springbank characteristics prevailing.
