Hirsch 7 Year B&B Single Barrel Double Oak Bourbon
Distilled in Kentucky from a mash of 72% corn, 13% rye, and 15% malted barley, this barrel of bourbon was initially matured for five years and five months in char #3 new American oak. It was then finished for two years (!) in a second (custom made for Hirsch by the Independent Stave Company) char #1 oak barrel featuring wood that had been seasoned for 24 months before being toasted and given a very light char. After finishing, the whiskey was bottled without chill filtration at a barrel proof of 119.4.
The nose is sweet with notes of candied fruit, caramel, milk chocolate, and shortbread balanced by a pleasant fresh wood scent. The palate is sweet and dessert-y but not thick or cloying, with lovely flavors of chocolate oranges, caramel, creme brulee, cinnamon sugar, and a touch of earthy wood. The wood note lingers through a medium finish where it is joined by caramel, chocolate, and toasted marshmallow.
