This 310-liter batch of Pechuga de Mole Poblano is distilled by maestro mezcalero Delfino Tobón Mejia in their hometown of San Pablo Ameyaltepec, Puebla. To make this special batch, Delfino filled the boiling chamber of his still with the fermented mash of wild-harvested agaves Pizoma a. Marmorata) & Papalome (a. Potatorum), along with an already recently-distilled run of Papalome. He then placed a basket of raw chicken breast and traditional mole poblano (made with ingredients such as apples, bananas, peanuts, walnuts, chile mulato, chile ancho, chocolate, anise, cinnamon, and cumin) between the boiling chamber and condensing chamber of his handmade three-plated Copper stills. He proceeded to power the two copper stills with open flame, and over the course of a week, distilled this 310-liter batch of this Pechuga de Mole Poblano Bottled January 2024.
*May contain nuts A truly exceptional flavor journey for the palate! The red fruit aromas of the strawberry pop in a fun way, accentuated by warm spices like cinnamon. The Mole adds a resounding back note of cocoa, with the subtle fruity warmth of the chile ancho. Both fruity and savory, with the spice taking a supporting role this certainly evolves with each sip.
