The Chuncho bitters work wonderfully in a Pisco sour. The semi-citrus blossom/floral aroma enhances each sip when used as a garnish on the egg foam. It also works as an augment as a few drops in the mix liquid. This very much exceeded my expectations, not that there is anything wrong with Angostura or other aromatic bitters in other cocktails, but here the floral component of the Chuncho excels, making the drink something special.
The one negative I experienced was with the fabrication of the cap/bottle and dasher. The cap has been difficult to thread on because the bottle dye moulding has seams that extend through the threads. Nevertheless, when threaded properly it seals, even when placed on its side. However, the dasher cap was entirely unperforated! It had no hole and would not allow any liquid to pass, so I removed it and used a 3/32" drill bit to make an appropriate hole. Works now.
Angostura is a fine "make do" bitter for a Pisco sour. But if you want the real taste of a Pisco sour this is your go to bitter. Also fun to replace angostura with this bitter in other recipes just for fun.
