Beach Blush Negroni

Those of us in the Negroni cult know that our beloved three part masterpiece of a cocktail is truly a drink for all seasons, and has a place at our tables no matter the time of year. So for this Negroni Club's selection, we were inspired by a San Francisco summer: sitting beachside under a bone-chilling marine layer of fog, bundled up tight and defiantly sipping our Negroni as the bellow of a foghorn rides along the thick, salty air. 

Sheringham Seaside Gin, from Vancouver Island, grounds the drink with a blend of classic Gin botanicals, lavender, rose, and crucially - the wildcard addition of winged kelp, lending a briny element that balances the floral and piney components perfectly.  Faccia Brutto Aperitivo from Brooklyn plays the part of our bitter here, with its mid-level bitterness (somewhere between Aperol and Campari, leaning toward the latter).  And in place of vermouth, the Holy Ghost of our cocktail trinity, we have Cap Corse Blanc Quinquina, a fortified wine from the island of Corsica that is bittered with Quinine. Minerality, acidity, and floral notes are the name of the game here, with the light Quinine bitterness bolstering that ever essential element of the Negroni, without overdoing it.
