Ensamble mezcals are a combination of two or more agave species distilled together in a single batch. Typically, the agave piñas are also roasted and fermented together.The mix of agaves can produce wildly-different flavor profiles. Ensambles are the traditional style of making mezcal during a time when mezcaleros would pick whichever agaves were ready for harvest, regardless of species.
The Espadin in this blend is slightly smoky, yet an efflorescent undertone rests on the center of the palate, while citrus and floral notes from the Barril are introduced and strengthened by the warm viscose finish of the Mexicano. Light and easy sipping with a complex lingering finish.

Some of the absolute best mezcal. We use it for all sorts of drinks, but a unique one is Greg from HTD's Chainsaw man. 1.5oz Bozal Ensamble Mezcal, .5oz wray and nephew overproof, 1oz lime, and strawberry or raspberry syrup to taste. Smokey, gasoline-ish, smells like revving up an engine and tastes great!
I thought this was really great, and very true to the description. Super sippable!
Bozal is a brilliant spirit, complex and generous of soul.
