1000lbs of second peaches from Briermere Farm, picked and then boiled - yielding a sweet peach juice. Added some champagne yeast and fermented to an off-dry peach wine before fortifying with peach leaf and elderflower distillate, quassia, rose petals, and pink peppercorns. 16% ABV.
