Elijah Craig Toasted Barrel Bourbon

Elijah Craig Toasted Barrel Bourbon begins its life as fully matured Elijah Craig Small Batch Bourbon. It then goes into a secondary barrel at barrel proof. These secondary barrels, crafted in partnership with Independent Stave Company, were made with 18 month air-dried staves which were toasted (moderate toast) then flash charred. Both the initial and finishing barrels were made from new American oak. Bottled at 94 proof.

On the nose, toasted marshmallows, rich caramel, vanilla, and baking spices. Light undertones of oak, summer fruits, and Granny Smith apples can also be teased out. Sweeter flavors of graham cracker, chocolate, and caramel contrast nutmeg and pepper spice notes on the palate. A touch of seasoned wood is evident, but fleeting. The presentation of flavors is sweet and enjoyable. On the finish, a blast of rye spice is followed by a rich caramel, brown sugar sweetness. Fireball candy heat along with hints of tobacco and oak lightly tease as the flavors taper off.
