One of the first producers to play with a mash bill of 100% oat, the organic grain is sourced from Midwest farms and the whiskey is aged in 30 gallon new oak barrels from Minnesota. The resulting spirit is rich in flavor, with an exceptionally creamy palate and finish. This unique whiskey has become a Chicago favorite, and is held up as an exemplary model of what is possible with unique single grain expressions. The fragrance shows notes of Granola clusters, milk chocolate, fresh cream, toasted oak, and roasted nuts. The palate is rich and creamy - almost like flan - with an interesting note of coconut milk, caramel, mint, cashew, and malted milk balls, before a bright and clean finish. Bottled from a single barrel at 80 proof.
