Demerara Gum Syrup can be used in place of a classic gum syrup, except that demerara is a raw, minimally processed cane sugar that retains a distinct molasses note. Gum arabic is an all-natural emulsifier derived from African acacia trees. The addition of gum arabic lends the syrup a silky and more luxuriant mouthfeel when compared to a common simple syrup. I've been using this for cocktail recipes from "Cocktail Codex". It works very well in an Old-Fashioned or Sazerac. I prefer buying this to making my own.
