Spilt Clarified Milk Punch

Spilt is an ready-to-drink canned clarified milk punch produced by New Alchemy Distilling in collaboration with the Point Reyes Farmstead Cheese Company. This 19% ABV cocktail comes packaged in a 200 ml can and features a recipe inspired by a Michelin-bar variant of a Ramos Gin Fizz, which notably upcycles leftover whey from cheese production. The drink has a faint yellow, translucent appearance with a silky mouthfeel, combining New Alchemy's Fleurette Gin, upcycled whey, house-made citrus amaro, fresh orange and lemon juices, and bergamot tea. The science behind it relies on an age-old technique where acidic citrus splits milk into curds and whey, allowing the milk proteins to filter out astringent compounds and color to leave behind a perfectly clear, shelf-stable liquid. For the best tasting experience, it should be shaken and served over ice in a rocks glass to build a light, velvety foam head.
