Chinati Vergano Vino Chinato, a highly esteemed artisanal aromatized dessert wine (digestif) from Piedmont, Italy, is crafted by former chemist Mauro Vergano. Rooted in young Barbaresco (Nebbiolo), it incorporates quinine bark, ginseng, rhubarb, and an assortment of spices, yielding a complex, bittersweet, and tea-like flavor profile.
A "concia" (extract) is prepared through the maceration of herbs, spices, and roots in beet-sugar-based alcohol for a period of 20–30 days. Key ingredients include: Quinine bark (China), Ginseng & Rhubarb, Cinnamon, Cloves, Cardamom, and Bay leaves.
