Woody Creek is one of the few distilleries in the country to control every aspect of the production, from growing their own rye all the way through to bottling. For their wheated bourbon, that means fermenting a mash of 70% corn, 15% wheat, and 15% barley, all sourced from local farms, distilling it in their CARL Pot Still from Germany, and aging in new American white oak barrels for at least six years before bottling at 47% abv. The nose is approachable with vanilla cream and poached peach, caramel wafers, vanilla covered almond, and a gentle touch of oak spice. On the palate, vanilla soaked peach and apple with sweet caramel, toffee, more vanilla, and spiced cherries. The finish is lengthy with rich fruit fading into oak spice and baked peach.
