Sisters Elena, Valeria and Claudia Gaidano make artisanal vermouth in Piedmont’s Asti region, using a recipe that dates back to the founding of their farm in 1840. While this is a red vermouth, they make it using 95% Chardonnay and 5% Sauvignon Blanc, combining it with cane sugar, vanilla, rhubarb, chamomile, wormwood, elfdock, cloves, St. John’s Wort, gentian, angelica, hops, cinnamon, nutmeg, mace and other proprietary botanicals. It is rich and deeply aromatic with fall notes of vanilla, orange and pumpkin pie spices.
