Holyrood Ambir Single Malt Scotch Whisky

Ambir, the third single malt release from Hollyrood Distillery, was created as a showcase for the flavors and textures of their specialty malt types. To that end, the barley mash distilled for this release includes Chocolate malt, Vienna malt, Caramalt, and Crystal 240 malt among others. The whisky is matured primarily in ex-bourbon barrels along with some ex-Oloroso casks and bottled without chill filtration or color added at 98.6 proof. The result is a sweet dessert pour with a velvety texture. On the nose, scents of creamy fudge, caramel, demerara sugar, and cocoa powder mingle with honey and biscuit. The palate features delightful flavors of honey, mocha, toasted malt, shortbread, and caramel.

One of the most interesting and competent new Scotch distilleries, Holyrood was founded in Edinburgh in 2019 with the mission of using heritage and specialty malts and different types of yeast to create unique and flavorful spirits. To help them fulfill their vision, founders Rob and Kelly Carpenter enlisted the aid of David Robertson, former Master Distiller for Macallan. Together, they have been experimenting with different malts and yeasts in various combinations, creating delicious whiskies that honor tradition while creating something genuinely innovative.
