Brucato was founded by Sierra and James Clark. Sierra comes to the endeavor with a background in food and drink writing and academia — she holds a PhD in Food Studies, focusing her studies on spirits. They have built the recipes carefully, starting with 200 individual infusions of fruits, herbs, and spices, sourced from small farms or foraged where possible. They are deeply involved in all steps of the process, down to hand-peeling citrus and applying neck labels by hand.
California chaparral covers the foothills and mountain slopes along the coast. Characterized by manzanita, sage brush, and scrub oak, the grey-green rugged hills explode with wildflowers in the spring.
Brucato Chaparral’s dominant ingredients are yerba santa (a California native herb with a distinct bittersweet flavor, highly revered by apothecaries for its medicinal properties), spearmint, and cardamom. The result is a warm, bright herbal flavor, with a long-lasting mint and anise finish. Bottled at 46.4% abv.

This has become a "always have on hand" in our house. It is very herbaceous and not too sweet. I prefer it to Green Chartreuse in any cocktail since it makes it less sweet. Makes a Last Word even better. Also good with soda water or tonic water as a spritz. The Woodland "flavor" is also delicious. I have one favorite cocktail I make with it, but I find we don't make as many cocktails with that one.
I bought this bottle as Green Chartreuse alternative, and promptly put it through it's paces. The taste is very herbal, slightly more mint and basil forward, but still with a very pronounced anise flavor. Like absinthe, it becomes cloudy with mild dilution, an interesting effect. I've made a Last Word, and a Bijou with it, as well as a few other home concoctions that I like. It was a decent substitute in the Last Word, and improved the taste of the Bijou, although the slight cloudiness detracted from the name's intent. Overall, an excellent liqueur in it's own right, and an acceptable substitute, if needed, for Green Chartreuse.
We've tried all three of Brucato's amaro expressions and this one absolutely steals the show. It has a high alcohol content (45% ) and a sweet and thicker mouth feel nearly identical to Green Chartreuse. It has a unique and powerful bitter profile with many layer soft herbal notes to prop up and balance it out. Great on it's own and in cocktails, but keep in mind it packs a bit more of a punch than Green Chartreuse so adjust proportions accordingly.
I really enjoyed the notes of sage, yerba santa and mint, but I guess I wasn't prepared for the heavy duty anise, which lingers a little too heavy on the palate for me. I'm ok with a little hint of anise, but in general it's not my jam, so I ended up passing the bottle along to someone who's more into the pastis than I am. Would definitely recommend if you like hiking and licorice, because that's what it tastes like.
This is so easy drinking and I cannot believe the proof is as high as labeled. The flavors are light and bright and yet also very complex with only subtle sweetness. Now I need to buy the others I suppose…
I've tried all three of Brucato Amaro's expressions and this one is my favorite. I made a really interesting Last Word cocktail with this in place of Green Chartreuse and I was pleasantly surprised! Give this a try!
Complex with nice body, cardamon followed by sage/floral/herbal followed by anise. Really enjoyable bottle from small local producer, don't tell your friends.
I bought all three and am having trouble picking a favorite...they are each different from the other and so yummy!
