La Gauloise Jaune is a historic French herbal liqueur known for its bright golden color and complex, aromatic profile. It is produced at the Distillerie du Centre in Limoges, France, which was founded in 1789.
It has a syrupy, creamy texture with notes of honey, vanilla, caramelized sugar, and floral touches. Compared to its green counterpart, it is milder, sweeter, and more accessible.
The recipe remains a secret but includes botanicals such as saffron (which provides the natural yellow hue), angelica, St. John’s wort, cardamom, and genepi.
Frequently used as a substitute for Yellow Chartreuse in classic drinks like the Naked and Famous or modern riffs where a honeyed, herbal depth is desired.
