
Mijenta Symphony Seris No. 2 Reposado Tequila
Mijenta’s Symphony Series explores the elegance of barrel aging through the use of unique casks built from staves of different wood varieties. Composed of oak from Minnesota, Missouri, Pennsylvania and Virginia, these symphony barrels create a complex ecosystem that continuously enhances the incredible richness of the tequila as it matures for approximately 8 months. As the spirit transforms and evolves, these barrels bring to life something utterly unpredictable. Bottled at 45% ABV. Maestra Tequilera Ana María Romero noted that with this expression, “we wanted to showcase a different aspect of the impact of the barrel on the tequila, and I believe the higher ABV helps bring to life the nuances and flavors that are developed through the unique environment in the barrel.”
According to Romero, the Minnesota oak provides fruity notes, the Missouri oak adds vanilla and spice, the Pennsylvania oak gives notes of spice and smoke, and the Virginia oak adds vanilla and coconut flavors. “These differences are a result of, in part, the terroir from which they come,” she told Robb Report. “As the spirit interacts with each type of wood, which have different pore structures and taste profiles, an ecosystem is created in the barrel that continuously enhances the incredible richness of the tequila. New compounds develop that transform and evolve, bringing to life in the barrel something utterly unpredictable.”
Aromas of barrel spice, cinnamon, clove, light caramel, cooked agave, a floral component, toasted coconut, citrus, white pepper, and butterscotch. On the palate the spices really take over with cinnamon, and clove being the leading note. Medium finish with cooked agave and a bit of vanilla coming through.
Limited Edition aged for 8 months in symphony barrels.
Barrels are crafted from oak staves sourced across the U. S. (PA, VA, MO, MN).
Coopered in Napa Valley, where staves are toasted over low heat and sprayed with water to enhance wood characteristics.
