Neta Bicuixe + Espadin Ensamble Mezcal

Created by Juan Vásquez Jimenez, one of the youngest producers that NETA works with.
This batch was made with 100% capón agaves- Bicuixe capón -two year, and Espadín capón -one year. Approximately 900kg of two-year capón wild Bicuixe plants and nearly equal weight of one-year capón Espadín were harvested in the days surrounding the full moon of late September 2021, and crafted into 200L of a sweet, savory, and complex batch typical of the region. Pops of melon skin and orchard fruit seamlessly slide into bright sweet finish with a burst of minerality.
