Pink Pony Collins

Freeland Spirits is Portland's proudly women-owned distillery, and since launching in 2017 they've become one of the country's most celebrated craft producers. Their limited-edition Pink Gin was created for Women's History Month, with a portion of every bottle sold supporting Xcelerate Women, a nonprofit helping grow the next generation of women-owned businesses.

Its standout character comes from a two-step distillation. Fourteen botanicals, including juniper and pink peppercorn, are first distilled in a traditional copper pot still to create a bold, resinous foundation. A second pass through a vacuum still gently captures delicate ingredients like lemon balm and cucumber, preserving bright aromatics that would otherwise be lost. Huckleberry, white peony tea, and a touch of honey-agave sweetness complete the profile, balancing tart fruit with a savory, herbaceous finish. Its vibrant blush color comes naturally from carmine.

To showcase its subtle sweetness, we built the sparkling Pink Pony Collins. Yuzuco's Lemon Yuice—a "super juice" made from California Eureka lemons—adds bright citrus, while glitter simple syrup and Fever Tree Pink Grapefruit Soda bring shimmer, sparkle, and effervescence.
