Freeland Spirits is Portland's proudly women-owned and operated distillery — and since crashing onto the scene in late 2017, they haven't looked back. This dazzling Pink Gin is their latest limited release, dropped in honor of Women's History Month. Even better? Every bottle sold puts money directly into Xcelerate Women, a nonprofit fueling the next generation of women-owned businesses. Drinking for a cause never looked so good.

 

The magic starts with the distillation — a brilliant one-two process that sets this gin apart. First, 14 dried botanicals — juniper, pink peppercorn, and beyond — get their moment in a traditional copper pot still, building a bold, spicy, resinous backbone. Then comes the twist: a vacuum still (rotary evaporator) runs cool and slow to coax out the bright, fleeting essences of delicate ingredients like lemon balm and cucumber — flavors that heat would brutally destroy. It's old-world craft meets cutting-edge technique, and the result is stunning. Huckleberry, white peony tea, and a whisper of honey-agave sweetness round things out, crafting a spirit that dances between tart fruit and a savory, herbaceous close. And that gorgeous blush? Completely natural, courtesy of carmine. It's as beautiful in the bottle as it is in the glass.
