From the pristine lagoons to the lush jungles, Isle of Fiji is an ode to the beauty of the Fiji Islands. This delicious rum is made using traditional techniques and local Fijian sugar cane. First aged in this tropical climate in bourbon casks, the rum is then sailed to the southwest of France for a second maturation in French oak casks. This double ageing method and Fijian distillation creates a rum with warm notes of exotic fruits and raisin. Distilled from molasses on column and pot stills after a 4-5 day fermentation, aged in ex-bourbon and Cognac casks. 98 points and Aged Rum Chairman's Trophy winner from Ultimate Spirits Challenge.
Sweet plantain, molasses, and creamy tropical fruits are pungent and distinctive aromas. Dark brown sugar is clean and sweet in the mouth, quickly enhanced by background notes of allspice, butter baked bananas, and soursop. Clean and focused, the funky flavors are precise and delicious.
