Suze, a french aperitif staple since 1889, is these days one of the most called for bitter liqueurs in the creation of a White Negroni. The irony there is that it's decidedly, proudly, technicolor yellow, imbuing the drink with an almost lemon-lime Gatorade hue. It has been immortalized by Picasso, and in recent years was one of the first non-red bitters on the US market, perhaps explaining its ubiquity. But it's a classic for a reason, and bitter-hounds love it's pure gentian, herbal quality. It has a distinct aroma of wild gentian harvested from the Alps. This complex, aromatic aperitif has notes of bittersweet herbs and subtle accents of vanilla, candied orange and spice and a delicately bitter finish.

Intense, herbal, and highly aromatic, Suze is a powerfully flavoured gentian liqueur that can take your bitter cocktails to a whole new level of complexity. While the initial nose and taste are both forthrightly bitter, there is a surprising amount of sweetness and subtlety lingering behind the gentian thrust. Notes of bergamot, sweet orange, Neroli, lavender and vanilla compete with more herbal celery, rosemary, and grassy aromas, the entire aromatic experience reminds me strongly of the classic German eau de cologne, 4711. The palate is sugary and slightly lemony (more lemon zest than lemon juice) followed by a strong, herbal bitterness that lingers into a sort of gently woody finish. Delicious and quite complex. I love this mixed with gin but it's also delicious with vodka, rye whiskey, light rum, even tequila and mezcal.
We watched a David Levovitz Instagram live and learned how to mix a cocktail called An Officer and a Gentian. Wonderful cocktail and we will highly recommend this liqueur.
You can sip this on its own but I love it as the bitter component for your White Negroni. It is now a standard in my liquor cabinet.
One of my favorite aperitifs! I love the bitterness from the gentian root in this. Most of the time I just drink it with ice.
I bought this on the recommendation of a friend, and I am glad I did. Great addition to your bar for use in Negronis or Spritzes!
