The Pink Pony Collins
This is our official Pride drink, and we're mixing it all month. The build starts with Freeland Spirits Pink Gin — 14 botanicals including juniper, pink peppercorn, lemon balm, huckleberry, and white peony tea, distilled first in a traditional copper pot still and then through a vacuum still to preserve the delicate aromatics. Its blush color comes naturally from carmine. We brighten it with Yuzuco Lemon Yuice, then finish it tall with glitter simple syrup and Fever Tree Pink Grapefruit Soda.
Freeland is a women-founded Portland distillery. Every bottle supports the Xcelerate Women nonprofit, which funds the next generation of women entrepreneurs. The drink earns its name.
