Nick and Zach Taylor's whisky blending company Found North has become a staff favorite here at Bitters and Bottles for consistently offering high quality, highly aged blends of Canadian Whiskies with robust and unique flavor profiles. We are happy to report that Batch 007 continues this trend. Built around a 25 year old corn component distilled in 1998 and aged in ex bourbon barrels, Zach and Nick added in a pair of 22 year old corn whiskies (one aged in ex-bourbon barrels and one aged in new oak) and an 18 year old rye whisky that was matured in Hungarian oak. The blend is bottled without chill filtration at 131.8 proof. On the nose, sweet maple syrup mingled with brown sugar, fresh pine needles, cooked pears, and a touch of minerality. On the palate, sweet cinnamon and maple syrup lead the flavors, with caramel joining and turning to spicy black pepper that tingles on the mid palate. The spice carries through the finish, where it is joined by dark chocolate, leather, and a touch of maple.
