For the latest release in the Cask Finish Series, Barrell took on the challenge of working with Amburana wood. A blend of 5, 6, 7, and 10 year old bourbons from Indiana and Kentucky were finished in full 53 gallon Amburana barrels (no spirals or wood chips here) and bottled without chill filtration at a cask strength of 116.42 proof. On the nose, a rich aroma of cinnamon dominates, with notes of banana, horchata, and apple peeking around the edges of the cinnamon. The palate is likewise dominated by cinnamon with flavors of ginger beer, pumpkin pie, and chai also present. The finish brings some citrus peel and molasses sweetness to balance all the baking spice.
