Neversink Gin is made from apples grown in a single orchard in New York state. The apple-based spirit is macerated with juniper berries for 24 hours then distilled through eleven botanicals: juniper, coriander, cardamom, star anise, cinnamon, orris root, angelica root, elderflower, and fresh orange, lemon and grapefruit peels. The resulting dram is a lush and distinct spirit with versatile cocktail applications and a distinctly New York character, bottled at 43% ABV.
On the nose, Neversink Gin is delicate, without the usual heat from juniper. Instead, mild cardamom and floral notes prevail. There's a similarly delicate feel on the palate that evolves into a slow building heat with more concentrated spice flavors. Though a touch of juniper is present, it's not overbearing, so those who shy away from the London Dry style are likely to enjoy this in everything from a Gin & Tonic or Collins, a blanc vermouth Martini,or on its own over a big ice cube.
