Plantation Trinidad 2011 Sauternes Finished 10 Year Single Cask Rum
Plantation's "Single Cask" series sees their traditional double maturation of ex-bourbon and ex-cognac take on a tertiary maturation in any number of wildcard casks, then bottled as a single cask from there. This column still rum from Trinidad Distillers Limited (Angostura) was aged for 9 years in Trinidad before being moved to France for an additional year aging in cognac casks, then another 3 months in Sauternes dessert wine barrels. On the nose, it starts with a very fruity profile of mango, citrus, and quince with delicate notes of acacia honey and vanilla. The palate is rich and complex, it follows the nose with pineapple and peach, beeswax, toasted almond and butter with hints of ginger and cloves. Bottled at 43% abv with 5 grams per liter of added sugar, or "dosage".
