This whisky is aged first in Japanese Mizunara Oak casks for six years, then an additional two years in barrels from Martinique that previously held JM Rhum agricole. While rum finishes are becoming more and more common, the rum rarely hails from Martinique, beloved for their full flavored Rhum Agricole, made from fresh sugarcane rather than molasses. The result of this aging on Kaiyo's whisky is a wonderful emphasis of the seaside nature, as well as intense notes of papaya, grilled pineapple, and a hint of grass.
